Every spring the forests of northern Jordan burst into bloom, and our bees move freely among wild thyme, sage, oak blossom and dozens of other mountain plants. The result is a poly-floral honey that changes subtly with each year's season. Lighter in colour than our Sidr, with a bright, floral sweetness and a faint herbal finish. Perfect for drizzling over labneh or stirring into warm tea.

Our Sidr Mountain Honey comes from wild lote trees growing between 700 and 900 metres above sea level in the forests of Ajloun. The bees forage a single botanical source, producing a honey that is dark amber, thick and aromatic with notes of dried fruit and caramel. It is raw, unfiltered and never heat-treated, so every enzyme and pollen grain remains intact. One jar contains roughly 60 foraging days of work from a single hive.

Jabal began with a single row of hives on a hillside above Ajloun, placed there by a beekeeper who believed that the best honey comes from leaving the bees to do exactly what they have always done. Twenty years later, that belief has not changed. We still follow the seasons, move the hives to where the blossom is thickest and harvest only when the comb is fully capped. No shortcuts, no additives, no pretending that nature needs improvement.
Every jar traces back to one place, the forests and slopes of Ajloun in northern Jordan, nothing blended from elsewhere.
Raw means raw. We do not heat, micro-filter or process the honey after it leaves the hive, preserving every enzyme and pollen grain.
The same family has tended these hives for two generations. You are not buying from a factory. You are buying from a beekeeper who knows each hive by name.
